The humble onion is very much part of the French culinary history. The quality of the onions is crucial in this recipe. We want both acidity and sugar to create a fully flavoured Onion Tart.

- 3 large onions
- Salt, pepper, nutmeg
- 1 spoon of flour
- 1 spoon of sour cream
- Grated Emmenthal.

- 250 g or 2 cups Flour
- 150 g or 2/3 cup of butter
- 1 big free range Egg
- 2 Tbsp water
- 2 tsp salt
