This Garden Pea Soup and its Bruschetta gives its best flavours when very fresh, crisp Peas have been chosen. A traditional favourite with everyone. To serve with a Bruschetta on the side is optional of course !
Here is the list of the different ingredients you will need to make the Garden Pea Soup and its Bruschetta that serves 4
First for the soup
- 200 g fresh green peas, shelled
- 500 ml chicken broth
- 100 g heavy cream
- 15 mint leaves
- 1 shallot, peeled and coarsely cut
- Salt and freshly ground pepper
Then for the Bruchetta
- 4 slices country bread or loaf
- 1 dl olive oil
- 100 g blanched peas
- 50 g pine nuts
- juice of 1/2 lemon
- 1 tablespoon raspberry vinegar
