Rabbit with Watercress and Prunes

This recipe of Rabbit with Watercress and Prunes is an easy recipe and a truly spring recipe because watercress is the ally of all dishes that want to celebrate spring. it also reminds us of all the easy but healthy and tasty dishes our grandmothers used to cook !  

First, here is the list of the different ingredients you will need to prepare this Rabbit with Watercress and Prunes that serves 4 people

  • 1 rabbit cut into pieces
  • 1 bunch watercress
  • 150 g or 5 oz large prunes ( dried plums)
  • 2 onions and 1 garlic clove
  • 200 ml or 1 small cup dry white wine
  • 10 g or 1 tsp butter and 3 tbsp oil
  • Salt and pepper from the mill

Now, here are the different steps you will need to follow to cook the Rabbit with Watercress and Prunes with a 20 minutes preparation time and 45 minutes cooking time

Wash and drain the watercress carefully. In a saucepan, place the prunes and add the white wine. Bring to a boil over low heat. When the wine boils, remove it from the heat, cover and let the candied prunes swell. Peel and chop the onions and garlic. In a cast iron casserole dish, heat the butter and oil mixture. Brown the pieces of rabbit on all sides. When all the pieces are golden brown, remove them and place them in a dish. In the same casserole dish, brown the watercress, onions and garlic. When the watercress is well melted, add the pieces of rabbit, the prunes and the white wine. Add salt and pepper, cover and simmer gently for 45 minutes.
