Crazy Baby Leaf Salad Omelette

  • 40 g of mozzarella
  • 8 black olives and 4 green olives, pitted
  • 4 basil leaves
  • 2 free range eggs
  • 1/2  tablespoons olive oil
  • 1 handful of baby leaf herb salad
 

Now, here are the few steps you will need to follow to make the Crazy Baby Leaf Salad Omelette

Cut the mozzarella in sticks. Halve the green and black olives and chop the basil leaves. Break the eggs into a bowl and add a tablespoon of water. Put 3 to 4 dashes of Pepper but very little salt. Add mozzarella and olives and beat gently with a fork. Heat the olive oil in a small nonstick pan. Pour the contents of the bowl. Cook over medium to low heat until the omelet is set to half its thickness. Spread basil on top. Add the handful of baby leaf herb salad and press it slightly into the eggs. when the surface is just beginning to thicken, fold the omelette in half and slide it onto a plate. Enjoy hot.
