Cheese Quenelles

A Quenelle is usually a fish or meat mousse, here my Cheese Quenelles is made with fresh Cheese and shaped into ovals with spoons and then poached. It is just delicious and healthy on top of that !

First, here is the list of the different ingredients you will have to get to prepare the Cheese Quenelles au Gratin that serves 4 to 6 with a preparation and cooking time of about 45 minutes

  • 1 1/2 pound farmer cheese
  • 6 eggs
  • 1 1/2 cup flour
  • A pinch of salt and one pinch of pepper
  • 1 cup whipping cream
  • One onion, sliced
  • Shredded Swiss cheese.

Now here are the few steps you will need to follow to make the Cheese Quenelles au Gratin

Beat the farmer cheese, add 1 by 1 the eggs, then slowly pour the flour. At the end, add  salt and pepper. In a big pot with boiling salted water, put around 4 quenelles at a time with 2 tablespoons and wait until they surface. Return the quenelles upside down and wait a little bit then skim, and dispose in a plate already prepared and buttered. Continue until all the dough is finished.

Melt a small piece of butter in a pan and simmer the onion already cut in very small pieces. Once the onion is cooked, add the ceam and pour on top of the quenelles. Put the shredded cheese on top and warm up in a hot oven for about 30 mn. Serve hot.
