Pear Poached in Red Wine

Sometimes when you try a wine in a dessert, something special happens. Here the Pear in these Poached Pear brings out an orange strand in the wine that is lovely. Prepare it a day in advance to allow the colours and flavours to soak into the fruit.

To make these Poached Pear in Red Wine that Serves 4 you will need a preparation & Cooking Time of 45 minutes :
  • 500 ml (2 cups) Red Wine
  • 100 g (1/2 cup) Caster Sugar
  • 2 sprigs of thyme
  • 1 Cinnamon Stick
  • 1 Orange
  • 4 Pears
  Mix the wine, sugar, thyme and cinnamon stick in a saucepan  and bring to the boil then reduce to simmer. Remove the zest of the orange and add to the pan, then squeeze the juice into the pan. Peel the pears, leaving the stalks intact. Add the pears to the pan, cover with a lid and simmer over low heat for about 30 minutes. Leave the fruits in the liquid and let cool. Remove the cinnamon stick and chill overnight. Before serving you have to remove the pears from the pan and reheat the liquid until it reduces and is thick and slightly sticky. Pour the hot sauce over the cold pears if you like and serve as is or with some vanilla ice cream.
