Apple Jam with Lemon & Honey

The harvest has begun and I will give you here at least three good reasons to eat apples. First, it is low in calories. Second, it is uplifting with its vitamins, minerals and natural carbohydrates. Finally, it is diuretic because rich in potassium and low in sodium. Apples are perfect in salads as well as in this Apple, lemon & Honey Jam to make yourself! Ingredients for 4 Jars of 8 oz or 250 g:
  • 1.2 kg (5 cups) cooking apples
  • 600g (2 1/2 cups) granulated sugar
  • Honey 160 g (1/3 cup)
  • Juice of one lemon
Peel, core and cut the apples into small cubes. Add 100 ml (1/4 cup) water and your lemon juice with the granulated sugar. Let stand 1 hour. Pour into a preserving pan or heavy-bottomed Pan. Add the honey and bring to a simmer. Cook the jam gently, take off the foaming if necessary until apples are translucent. When cooking seems good (between 25-45 minutes) put a bit of jam on a cold plate. If it congeals, the jam is ready to be put in jars. Then pour your jam into boiled jars and well dried and cover immediately.
