Tomato and Olive Tartar

This Tomato and Olive Tartar is a tasty Appetizer with juicy tomatoes and fragrant basil and olives. It is an ideal starter for serving with a drink outdoors, or before an evening summer meal !

First, here is the list of the different ingredients you will need to preparer the Tomato and Olive Tartar that Serves 4 with a Preparation time of 30 minutes

  • 1/4 cup (100 g) pitted black olives
  • 8 nice and round tomatoes
  • 3 dried tomatoes
  • 2 tsp. oregano
  • 4 Tbsp olive oil
  • Salt and freshly ground pepper

Now, here are the few steps you will nee dot follow to make the Tomato and Olive Tartar

Start by chopping the olives coarsely. Then, remove stems and scald tomatoes for 30 seconds then peel and remove the seeds. Cut the flesh into small cubes. Cut also the dried tomatoes in small cubes. Set aside in you fridge. After that, mix the diced tomatoes with the chopped olives in a bowl. Add salt, pepper and oregano and olive oil. Mix gently. Top with some fresh basil leaves. Finely, serve  this mixture in small glasses and enjoy with a nice crusty country bread or toasted sourdough bread.
