These grilled Aubergines also called Eggplant, add a creamy flesh of their plump to complement a lively flavour, specially with ripe Aubergines on a salad :-)

- 2 medium eggplants
- 5 Tbsp olive oil
- 2 garlic cloves, peeled and crushed
- 2 small romaine lettuce
- 1 small handful mint leaves
- Juice of 1 lemon
- 3 Tbsp plain yogurt
- 3 Tbsp sunflower seeds
- 2 Tbsp cumin seeds
- 1 pinch of salt
