This Yellow Courgette and Gruyère Savoury Cake is a sunny, colourful Cake. It delivers on flavour, whilst also being hearty and nutritious. The Courgette also called Zucchini adds bite. The Gruyère cheese makes it a perfect smooth savoury “En cas” ready to be served hot or cold .

- 3 free range eggs
- 150 g of flour
- 1 teaspoon baking powder
- 120 ml (1/2 cup) milk
- 80 ml (1/3 cup) sunflower oil
- 100 g (1/2 cup) grated cheese
- 1 large yellow squash washed and dried.
- 2 pinches of salt and 2 of pepper
- 1 knob of butter
Now, here are the few steps you will need to follow to make the Yellow Courgette and Gruyère Savoury Cake
Preheat your oven to 180 °C (356°F). In a pan, put the butter and toss the cubed zucchini. Cook over medium heat for about 10 minutes then leave on a kitchen paper towel.
In a mixing bowl, whisk the eggs, then add the flour, baking powder, salt and pepper. Gradually incorporate the milk and oil. Add the grated cheese. Mix well and then add the zucchini cubes.
Pour into a non greased loaf pan and bake for 45 minutes or until the cake is golden brown and well risen. Let cool and serve as an appetiser or as a starter accompanied by a nice green salad.
