The Ratatouille

First, here is the list of the different ingredients you will need to prepare The Ratatouille that serves 4 to 6

  • 2 Eggplant
  • 3 Courgettes
  • 4 tomatoes
  • 1 yellow pepper
  • 1 onion finely chopped and 2 pressed garlic cloves
  • 4 Tbsp Olive Oil
  • Herbs of Provence

Now, here are the few steps you will need to follow to make The Ratatouille

Wash and cut all your vegetables into cubes, except for the pepper that you will cut into thin strips.

Heat a big pan with the olive oil and fry the onion first. Once it is lightly browned, add the eggplant cubes and let cook for 15 minutes or so, stirring frequently. Then, add the pepper strips and continue to cook for 5 to 10 minutes. Then add the diced zucchinis. Continue to let cook for 10 minutes. Finally add the diced tomatoes with your pressed garlic.

Cover and simmer about 1/2 hour. Once the pan is filled with the juice of the vegetables, remove the lid, increase the heat slightly and let reduce by adding salt, pepper and herbes de Provence.
