First, here is the list of the different ingredients you will need to prepare the Potato Purée that serves 4 to 6
- 2 1/4 pounds potatoes, peeled and cut into quarters
- 8 cups water
- 3/4 oz salt
- 6 oz full fat milk
- 3 oz butter, melted
- Freshly ground pepper
Now, here are the few steps you will need to follow to make the Potato Purée
Put the potatoes, water and salt in a large saucepan and bring to the boil. Reduce the heat and let gently simmer for 30 minutes or until the potatoes are soft. Strain the cooked potatoes, then pass the potatoes through a potato sieve or mash them with a potato masher.
Return the potato purée to the saucepan and gradually mix in the hot milk, then, stir in the melted butter and season with pinches of pepper. If your purée is to firm, thin it down with some remaining milk and you will have the perfect purée when it is fluffy and forms peaks.
