This Garden Pea Soup & its Bruchetta gives its best flavours when very fresh, crisp Peas have been chosen. A traditional favourite with everyone.

First for the soup
- 200 g fresh green peas, shelled
- 500 ml chicken broth
- 100 g heavy cream
- 15 mint leaves
- 1 shallot, peeled and coarsely cut
- Salt and freshly ground pepper
Then for the Bruchetta
- 4 slices country bread or loaf
- 1 dl olive oil
- 100 g blanched peas
- 50 g pine nuts
- juice of 1/2 lemon
- 1 tablespoon raspberry vinegar
Here are now the few steps you will need to follow to make the Garden Pea Soup & its Bruchetta
In a skillet, saute the shallots without colouring, add the green peas and add the chicken stock. reduce for 15 minutes over low heat.
Blend the preparation. While mixing, add fresh heavy cream and chopped mint, salt and pepper. Refrigerate.
Before serving, toast the 2 cm thick slices of bread, and coat with olive oil. Brown the pine nuts in a pan, crush them. Blanch the peas and mash them with a knife.
Add the lemon juice, raspberry vinegar and pine nuts. Place the mixture over the bread.
Serve the fresh pea soup with a Bruschetta on a side and you will enjoy it as an appetizer.
