Artichoke Creamy Soup with Sesame Seeds

  • 6 artichoke hearts
  • 2 shallots
  • 3 ounces of olive oil
  • 1 sprig of thyme
  • 1 leek
  • 10 cl (1/3 cup) of cream
  • 10 cl (1/3 cup) of milk
  • 20 g ( 1 Tbsp) roasted sesame seeds
  • Pinch of Salt and freshly ground pepper.

Now, here are the few steps you will need to follow to make the Artichoke Creamy Soup with Sesame Seeds

Peel the shallots and chop finely. Wash and dry then finely chop the leek.

In a pan with a spoonful of olive oil, sweat the shallots with a pinch of salt for 1 minute.
Add the leek, artichokes and thyme and let Sweat the mixture for 3-4 more minutes.
Then cover with water and cook for 15 minutes at medium heat.

After cooking time, add the cream and milk and bring to a short boil.Mix everything in a food mill or blender, taking care to remove the thyme sprig before. Then, adjust the seasoning.
Pour the soup into a tureen or directly into the bottom of the bowls and sprinkle with sesame seeds.
