Zucchini & Fresh Basil Moelleux

Courgette & Basil Cakes… A very simple recipe that is easy to make and with very few ingredients. The Courgette or Zucchini and goat cheese are lifted out of the ordinary by the gentle spiced tang of Basil. Bon Appetit at laclassedecuisine.com  


Serves 4                            Preparation 15 minutes Cooking time 25 minutes

  • 400 g ( 2 cups) Zucchini or Courgettes
  • 12 fresh basil leaves
  • 2 eggs
  • 100 g (1/3 cup) flour
  • 1 Tbsp baking powder
  • 100 g (1/3 cup) fresh goat cheese
  • Salt and pepper

Wash and dry the zucchini/courgette and remove ends. Cut into cubes and cook for about 10 minutes in boiling water. Drain thoroughly.

Then mix the zucchini/courgette with basil leaves, until it become a puree. Add whole eggs, beat well then add the flour and Season with salt and pepper.

Pour the batter into small rectangular molds. Then add in each mold three pieces of fresh goat cheese by pushing it slightly down.

Bake for about 20-25 minutes at 200 °C ( 400°F ). At the end of baking, let it cool for ten minutes in the oven before removing off the oven and unmold.

Serve with a fresh tomato coulis as an appetiser or with a big green salad as a light meal.
