Goat Cheese & Thyme Crème Brûlée

Enjoying Goat Cheese & Thyme Crème Brûlée in these little individual pots of Crème Brûlée is a most attractive way to serve this dish. The soft goat cheese adds some tang but is enhanced by the thyme.

Here is what you will need to make these Goat Cheese & thyme Crème Brûlée to serve 6                          

  • 4 free range eggs
  • 3/4 cup (200ml) double cream
  • 1/2 cup (100 ml) milk
  • 2 pinches of sea salt
  • Freshly ground pepper
  • 1/2 cup (100g) fresh goat cheese
  • 3 sprigs of thyme
  • 2 Tbsp (25g) brown sugar to caramelise.

Now follow the preparation to succeed by making these Goat Cheese & Thyme Crème Brûlée. Their cooking time is of 10 minutes + 40 minutes.

Preheat your oven to 212°F (100 °C). Whisk the 4 egg yolks and 2 whites but without foaming it. Heat the milk and cream with the thyme sprigs. Add salt and pepper. Let infuse. Gently add the milk/cream mixture, warm, over the beaten eggs and add the crumbled goat cheese. Spoon into ramekins and bake for 40 minutes.

Remove from oven, let cool. Sprinkle with brown sugar and caramelise, then serve.
